Ingredients:
- 2 lbs chicken breast, cut into bite-sized cubes
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 onion, chopped
- ¼ cup olive oil
- ¼ cup soy sauce
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper to taste
- BBQ sauce (for basting)
Instructions:
- In a bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, garlic, paprika, salt, and pepper.
- Add chicken cubes to the marinade and let it sit for at least 30 minutes (or up to 2 hours) in the fridge.
- Thread the marinated chicken and chopped veggies (bell peppers, zucchini, onion) onto skewers.
- Preheat grill or grill pan to medium-high heat.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and has grill marks.
- During the last 2 minutes of cooking, brush with BBQ sauce.
- Serve hot with a side of coleslaw or grilled corn!
