Savannah’s BBQ Chicken Skewers

Ingredients:

  • 2 lbs chicken breast, cut into bite-sized cubes
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 onion, chopped
  • ¼ cup olive oil
  • ¼ cup soy sauce
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper to taste
  • BBQ sauce (for basting)

Instructions:

  1. In a bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, garlic, paprika, salt, and pepper.
  2. Add chicken cubes to the marinade and let it sit for at least 30 minutes (or up to 2 hours) in the fridge.
  3. Thread the marinated chicken and chopped veggies (bell peppers, zucchini, onion) onto skewers.
  4. Preheat grill or grill pan to medium-high heat.
  5. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and has grill marks.
  6. During the last 2 minutes of cooking, brush with BBQ sauce.
  7. Serve hot with a side of coleslaw or grilled corn!
